Tuna Melt Stuffed Tomatoes

Easy dinners are some of my favorite meals. Add farm fresh vegetables or fruits and we are in business! Last night for dinner I definitely needed something easy to make as I had been in quite a depressed state lately. These Tuna melt stuffed tomatoes were perfect! Make sure you keep the insides so you can make this amazing salsa/pico mixture for tacos or chips! One of my husbands co-workers gave us these tomatoes from hers and her husbands farm and they were amazing! Juicy and ready to eat! Absolutely perfect for this recipe!

What You’ll Need

  • 6-8 Tomatoes (farm fresh are best)
  • 8 cans of Tuna
  • 1 onion
  • 3 tbsp Dill
  • 2 tbsp Basil
  • Shredded Parmesan Cheese
  • 4 heaping spoons Mayo
  • salt
  • pepper

First you’re going to want to preheat your oven to 375. Then open your cans of tuna. Make sure to drain them well. We always use tuna in water as I think it tastes better.

Once those are drained you can dump them in your bowl you plan to use to mix it all together in.

Then grab your knife and your onion and get to chopping. I chop my onions pretty small as I want room to stuff plenty of tuna in the tomatoes.

Mix in a 4 heaping spoons of mayo. You don’t need a lot for this recipe just enough to make it all stick together.

Add the dill and basil. then mix it all together to make am amazing tuna mixture guaranteed to make you want a taste. salt and pepper to your preferred taste.

Once all that is mixed together. Wash your tomatoes and slice the tops off.

I used a knife to go around the inside and then cut the insides into 4 sections which make it easier to scoop out so that you have room for your tuna. Save your insides and tops!

Once the insides of your tomatoes are opened up and cleared out scoop your tuna into the tomatoes. I made sure to press mine down into the tomatoes so there was plenty in each one.

You’re then going to want to sprinkle plenty of parmesan cheese on top. I chose to sprinkle some basil on top as well just for extra flavor and flare.

Then slide these bad boys in the oven and let them bake for about 10-15 or until cheese is melted good and starting to get golden.

remove from oven let cool and enjoy! These paired so nicely with Brussels with garlic salt pepper and parmesan cheese on top. Made for a perfect and easy meal!
