Honey and Rosemary Whole Chicken with Potatoes

I am always up for a sweet and savory meal! There is something about sweet and savory that really gets my taste buds tingling. This whole chicken meal is perfect for guests or small families depending on the size of your chicken.

What You’ll Need

  • 1 Whole Chicken
  • Potatoes (these can be regular baking potatoes or red potatoes whichever you prefer)
  • 12oz of Honey (this is a great opportunity to see if you can find a local vendor as local honey always hits differently!)
  • 3-4 Tbsp of Rosemary
  • Butter
  • 2 Chicken bouillon cubes
  • 1 cup of Hot Water
  • salt and pepper

So first things first preheat your oven to 400 degrees.

To make sure everything fits get you a decent sized pan. I suggest something about 15.4″ by 10.5″ as that’s what we used and it was perfect!

You will need to rub butter all over your chicken. You can do this recipe without butter as well but make sure you have some sort of oil (we generally substitute with coconut or avocado oil both work great.) Now place your chicken in the pan.

Then you will want to get your hot water and your bouillon cubes and mix them together in a small bowl or cup measurer.

Once the cubes are pretty mashed and mixed (they don’t have to be full dissolved) pour into the bottom of your pan.

We used two HUGE baking potatoes however this can be done with red potatoes if you prefer. So all you would need to do is chop them up and place them in the pan around your chicken. kind of stir them around so they get the bouillon mixture on them and around them. Then you will want to sprinkle about 2/3 of your rosemary on your potatoes and chicken. Make sure you put some inside your chicken as well for better flavor.

You can go ahead and add some salt and pepper now or you can wait till the end (if you are like us you could even do both)

Go ahead and drizzle about half of your honey all over your potatoes.

Place the pan in the oven for about 20 minutes (this is with a thawed chicken) after 20 minutes check every 5-10 removing when close to done (when its getting cooked but still has about 10-15 minutes left)

Now drizzle honey over your chicken and finish adding the rest of the rosemary and place back in the oven.

as every oven cooks differently times many vary so make sure your chicken is cooked through all the way and potatoes are soft. Once you have done that you can cool, cut, and serve!

And there you have it an easy one pan dinner with little mess but a whole lot of bang!
