Chicken Meatballs

This chicken meatballs recipe is so good and easy to make. My favorite way to make these is in the air fryer! These are one of Lucas’s favorite lunches and honestly mine too especially since they are generally pretty keto with only about 4 carbs!

What You’ll Need

  • Ground chicken
  • 1 Liptons onion Soup Mix pack
  • 1 Egg
  • Bowl
  • Spatula
  • Avocado Oil
  • Airfryer or pan

So first we are going to make sure our ground chicken is thawed. This makes it easier to blend everything together and trust me you want it all blended.

Then we will put our ground chicken, Liptons onion soup mix, and egg in a bowl and mix. I love to use my kitchen aid mixer for this so I know its all very well blended together plus it makes it easier. You can however hand mix or use a hand mixer just make sure its all blended well.

Make them into balls. I usually get about 2 spoons worth and make then into pretty good sized balls.

Place as many as you can in your air fryer just make sure they aren’t directly touching. (I place mine on 400 degrees for 10-15 minutes) Cook until they are golden brown.

You can drizzle oil over them in this moment or not it’s up to you. I personally will drizzle a little but alot isn’t really necessary.

If you can pan frying you can place them in your hot pan with your avocado oil heated up already and cooking them as you would any other meatball.

You can also place them on a pan and bake them (375-400 depending on your oven and how it cooks for 10-15 minutes or until golden) or freeze them to save for later.

And there you have it an easy lunch for you and the kiddos. I love how golden brown they are when they come straight from the air fryer but how juicy they are when you bite in!
