One of our many staples in our house is tortilla pizzas. These have been an easy meal for us to make in the past and are quite customizable.
Currently doing Keto so until recently I didn’t think this was an option for me to even eat really however there are a few options for those doing keto like me. However if you love some carbs an don’t mind to consume them then don’t worry you’ll enjoy this too!
This meal was something I originally started doing for my kiddo but the whole family has enjoyed.
What You Need:
- Tortillas (if you are doing this on a keto diet you can sub this for the low carb tortillas or even the cheese wraps. The cheese wraps are the best because they have 1 carb so its a much lower carb count and gives you a bit more wiggle room with the sauce)
- Pizza Sauce (for keto I suggest great value brand; Rao’s; ass both of these are pretty low in cabs. Ragu is semi low as well however it does have a bit more than the other two brands. If you have a favorite brand share below I would love to try some other brands that are low carb!)
- Pepperonis
- Shredded Cheese (I mean can you ever have enough cheese?)
So what your’e going to do is preheat your oven to 375 and get you a pan (as you can see in the pic ours is very well loved) and you may want to spray it however I never have an issue with tortillas or cheese sticking to mine.
Lay your wrap whichever you choose out on the pan and scoop out your desired amount of sauce. I always make Lucas’s very saucy. The sauce and cheese normally spread off the sides of the tortillas but once cooled it doesn’t make a difference truthfully and just cuts like it would if it were a tortilla.
Add your shredded cheese and pepperonis.
You remember me saying this was extremely customizable? This is that part! In the past I have changed out the cheese and toppings for feta, Parmesan, red peppers, chicken, etc.. And the best part is you don’t need much of any thing you put on top.
Place the pan in the oven and let it cook till tortillas brown or cheese melts. Be careful not to let it burn. Cooking only takes about 8-10minutes but it does depend on your oven.
Once done remove from oven let cool and cut. For Lucas I love to cut them into 4 pieces two pizzas at a time and he is satisfied.
