Big Burritos With Hidden Veggies

Let’s face it moms sometimes it feel likes it is impossible to get enough veggies in your kids meals. I’m always trying to find ways to sneak them in to my sons food or find creative ways to add them even without them doing a spy mission all the way to his tummy. These burritos are perfect for that! You can add so many veggies to taco meat and then add seasoning to it and they never know.

What You Need:

  • 1 pound of meat
  • 1-2 packets of taco seasoning
  • broccoli slaw
  • Veggies of your choice (some of our favorites are carrots, corn, and zucchini)
  • Rice you can also sub for cauliflower rice instead we also use Knorr rice sides as they are easy and cheap and already have flavor added.
  • Chicken broth
  • Optional beef broth
  • Grande flour tortillas
  • Cheese
  • Sour cream
  • Salt and pepper for taste

So some people steam or heat up their tortillas so you can do that if you choose however we chose not to.

So you’ll want to brown your meat. While your meat is browning cut up any veggies you choose to add to the mix.

Go ahead and start your rice (we chose a Knorr rice side as our rice this time) sub the water for chicken broth and cook per the instructions.

Once browned add the broccoli slaw and veggies. I don’t usually measure when I do this.

After cooking a bit add chicken or beef broth instead of water to the meat and veggie mixture. Then add taco seasoning as well and cook up the taco meat mixture

Check the rice it should be almost done if not done by now.

Get your tortilla and just pile it on. I layered rice then meat and veggie mixture and then cheese and sour cream.

You can also add extras like guacamole, tomatoes, peppers, onions, and more!

Roll it up cut in half as they are huge and depending on your littles age you could even split it between two children to save food and not over fill them.

And that’s all there is to it! Now you have a huge burrito with all the things they need but think they hate hiding inside!
